I see people having sites with hundreds of outgoing links. Do people actually trade with sites like that?
Personally I try to keep my number of links well under 100 and I avoid trading with sites that has over 100 outgoing links. Few exceptions here and there of course.

Why would anyone trade with site that has 300-500 outgoing links on it already?

Not really sure... The majority of LS users are clueless about SEO.

So expect that the majority will do something like:

1) Have very few pages for you to trade with, but want links from 100 of your pages into their 25 hidden sites.
2) Accept any trade requests they receive.
3) Send out 100's of mindless requests a week.
4) Wonder why they have just enough traffic to make $250 a week.
