I have a question concerning WP post content and meta description.

Im currently using Yoast seo plugin and manually making posts daily about 8 posts.

Most of the time I make a short description of the gallery I'm uploading in my post and fill out the meta description by hand.

Sometimes I get lazy and copy my content from the post (text) and shorten it and place it as my meta description. Is this penalized by google?

Also how much text is best for my galleries?

Just keep making good galleries. You will keep getting busier and busier.

I have writers that do the same thing on some blogs that we seo for a large Canadian media company and I can assure you, this will not effect your seo. As long as your post title, description and meta are from your hand and not ripped.
Let me add that you should be a little more creative in your wording, it seems that your piling keywords in a few lines, if you're going to do that then extend the it to 135-210 words and make it look like its a dialog.
